Strawberry surprise brownie cupcakes

Strawberry Surprise Brownie Cupcakes
1 package brownie mix (9x13 pan size)
1 package Berry Burst Ice Cream Oreos
1 can strawberry frosting

Line two cupcake pans with paper liners.  Make brownie mix according to package directions.  Frost 24 oreos with strawberry frosting.  Place one in the bottom of each cupcake paper.  Spoon 1 1/2 Tablespoons of brownie mix over each frosted oreo.  Bake for 18 minutes at 350 degrees.  They might not look like much but they are amazingly delicious!!!

Can't wait until Christmas to try this with Mint Oreos!!! Maybe with some peppermint flavored frosting?  Hmmm.....

Southwest Salad

Southwest Salad

This is a recipe from Pat Chapman...miss you Pat!
It is very easy to make but it is definitely not a "make ahead" salad.
You will need: 
1 bag (10 oz) prepared salad
1 can (15 oz) black beans rinsed and drained
1 can corn (15 oz) drained
1/2 cup pincante sauce
1/2 cup ranch dressing
1/2 cup shredded cheese
1/2 cup diced tomatoes
1 cup crushed tortilla chips
Mix dressing and pincante sauce. Pur over lettuce.  Add the other ingredients and toss.  Try to add the tortilla chips at the last minute so they aren't incredibly limp.  I've found that the yellow corn tortilla chips work better than the white.

Hershey Squares


Hershey Squares...a favorite of my husband's family.  My mother-in-law, Alice Dishaw, gave this recipe to me. 
1/2 c. shortening ( I use butter, but then again, I am a bit of a butter snob)
1/2 c. brown sugar
1/2 c. white sugar
2 egg yolks
1 c. flour
1 c. oatmeal
6 regular size Hershey Bars
Cream together shortening and the sugars.  Add the egg yolks. Mix well.  Add flour and oatmeal.  Press into a greased 9x13 pan.  Bake at 350 for 18 minutes. While the dough is baking, unwrap the 6 Hershey Bars.  Remove from oven and top immediately top with the candy bars.  It works best if you lay three bars width wise in two rows.  Wait a minute or so until the tops of the candy bars are shiny and then use a knife to lightly spread the candy bars like frosting.  Super easy recipe and super yummy!!
