Gigi's oatmeal chocolate chip cookies with cranberries

Cream together:
1 cup butter
1 cup brown sugar
1 cup white sugar
Add:
2 eggs
1 1/2 tsp vanilla
When well blended add:
2 1/4 c flour
1 tsp salt
1 tsp baking soda
At this point I put the mixer away and mix the rest manually
Add:
3 c oatmeal
1 1/2 c chocolate chips
3/4 cup craisins or dried cherries
Mix then:
Drop by spoonful onto a baking sheet lines with parchment paper
Bake for 10 min at 350
This is an adapted family recipe. My mom used to use chocolate chips and Spanish peanuts...also yummy!

Onion free guacamole

6 avocados mashed
2T lime juice
2t salt
2t garlic
3 Roma tomatoes (diced)
1/2 c fresh cilantro
I LOVE cilantro!!! This recipe is adapted from my sister Marie's recipe but I doubled it and left out the onions....onions really hate me!  I also increased the cilantro...because I really do love cilantro!!

Cheeseburger Pie

Wow.  Haven't posted on this site in quite a while.  Tonight I went to the fridge to see what I could make for dinner. I felt a little like old mother Hubbard and realized that I hadn't been grocery shopping for anything other than eggs, lettuce and creamer in weeks!!  Well I had a pound of hamburger in the freezer and thanks to modern technology, I knew I could thaw it in the microwave in 9 minutes.  I decided to make hamburger pie and realized that I had no mashed potatoes.  FAIL  I did have Bisquick mix that was a little past the "best buy date" so I decided to try something that I had heard about.  I went to Google and entered hamburger Bisquick.  Instantly there appeared a plethora of recipes! I tried this one and it went over well with Bop.

Easy Cheeseburger Pie

Preheat Oven to 400
Brown 1 Pound ground beef (with onions if you so desire...ewww)
drain and add 3T ketchup and 1 tsp worcestershire sauce.  place in a greased pie pan
top with 1 cup (or more) shredded cheese....I used more...I love cheese
Mix: 1/2 cup Bisquick mix
1 cup milk
2 eggs
Pour over hamburger cheese mixture and Bake for 25 minutes.
Just that easy.  Just that quick.

Oreo Vanilla No Bake Cookies

 
 
 
 
This recipe is an adaptation to a recipe I found on Pinterest.  The dark splotches you see are NOT raisins...ewwww!!  They are oreo cookie chunks!!
In a Large saucepan combine:
3/4 cup butter
2 c. sugar
2/3 c. milk
Bring to boil and boil for 2 minutes.
Remove from heat and add:
1/2 tsp vanilla
1(4.5 oz) box of Jello Oreo Cookie pudding
stir and then add 3 1/2 cups of oatmeal.

Stir and let set for a few minutes (about 3).  Spoon onto a piece of waxed paper so they look like blonde cow pies.

When they set up, put whatever you haven't eaten in an air-tight container.

Strawberry surprise brownie cupcakes

Strawberry Surprise Brownie Cupcakes
1 package brownie mix (9x13 pan size)
1 package Berry Burst Ice Cream Oreos
1 can strawberry frosting

Line two cupcake pans with paper liners.  Make brownie mix according to package directions.  Frost 24 oreos with strawberry frosting.  Place one in the bottom of each cupcake paper.  Spoon 1 1/2 Tablespoons of brownie mix over each frosted oreo.  Bake for 18 minutes at 350 degrees.  They might not look like much but they are amazingly delicious!!!

Can't wait until Christmas to try this with Mint Oreos!!! Maybe with some peppermint flavored frosting?  Hmmm.....

Southwest Salad

Southwest Salad

This is a recipe from Pat Chapman...miss you Pat!
It is very easy to make but it is definitely not a "make ahead" salad.
You will need: 
1 bag (10 oz) prepared salad
1 can (15 oz) black beans rinsed and drained
1 can corn (15 oz) drained
1/2 cup pincante sauce
1/2 cup ranch dressing
1/2 cup shredded cheese
1/2 cup diced tomatoes
1 cup crushed tortilla chips
Mix dressing and pincante sauce. Pur over lettuce.  Add the other ingredients and toss.  Try to add the tortilla chips at the last minute so they aren't incredibly limp.  I've found that the yellow corn tortilla chips work better than the white.

Hershey Squares


Hershey Squares...a favorite of my husband's family.  My mother-in-law, Alice Dishaw, gave this recipe to me. 
1/2 c. shortening ( I use butter, but then again, I am a bit of a butter snob)
1/2 c. brown sugar
1/2 c. white sugar
2 egg yolks
1 c. flour
1 c. oatmeal
6 regular size Hershey Bars
Cream together shortening and the sugars.  Add the egg yolks. Mix well.  Add flour and oatmeal.  Press into a greased 9x13 pan.  Bake at 350 for 18 minutes. While the dough is baking, unwrap the 6 Hershey Bars.  Remove from oven and top immediately top with the candy bars.  It works best if you lay three bars width wise in two rows.  Wait a minute or so until the tops of the candy bars are shiny and then use a knife to lightly spread the candy bars like frosting.  Super easy recipe and super yummy!!
